Color Coding = Food Safety
According to the CDC, one in six Americans is affected by a food illness each year. 48 million become ill and 128,000 people are
hospitalized annually. With these numbers continuing to rise, operators need to address these issues in order to assure customers
that food is being handled safely, with a process that minimizes risk.
One of the most common ways bacterial contamination occurs is through cross-contamination, or the transfer of harmful bacteria
from one food product to another by way of kitchen tools that have not been cleaned properly. Many professional kitchens color
code tools that are used for different foods to prevent cross contamination using the HACCP system.
Mercer Culinary® has seen these growing food illness and allergy trends and recognized the impact on the foodservice industry.
This led to the design and development of Millennia Colors®. The HACCP compliant, color-coded handles offer an easy way to
identify and implement systems to safely prep, cook, and serve food.
Benefits utilizing Millennia Colors® as part of a HACCP color coding system:
> Fewer food handling errors
> Eliminates any language barrier
> Makes training staff easier
> Creates an efficient and safe kitchen
> Shows a commitment to food safety to both customers and inspectors
